Okay...But why does local beef cost so much?

Trust us, we get it. I think a lot of people assume farmers must be making a killing because local beef costs more than grocery store beef, but the reality is most small farmers are barely making much at all after everything is said and done.
A lot of people picture cows out in a field and think that’s basically the whole process. In reality, there’s a LOT behind every pound of beef long before it ever reaches your freezer.
Feed, hay, minerals, fencing, equipment, fuel, veterinary care, processing costs, transportation, land, repairs, water systems, tractor maintenance, working facilities… the list honestly never ends.
And then on top of raising the animal, farmers also have to pay processing costs too. Most people don’t realize that part. Honestly, if you’re raising cattle the right way, it’s usually because you genuinely love it and care about agriculture — not because it’s some huge get rich quick business.For us though, knowing where our food comes from means more than just the price tag.
A lot of grocery store beef comes from huge supply chains where people have no clue where it actually originated from. Even ground beef can sometimes be multiple different animals mixed together in one package from multiple places.
Again, this isn’t me saying people are “wrong” for buying grocery store beef because realistically we all do it sometimes. Life is expensive right now.
But I do think there’s something important about supporting local agriculture and knowing the people behind your food when you can.
Small farms are disappearing more and more every year, and I honestly think people are craving that connection again — knowing the farmer, supporting local families, and understanding where their food actually comes from. That’s a huge part of why we’re building High Roller Provisions in the first place.Not to be fancy or trendy, but to create a place where people can support local producers, buy food they feel good about, and feel connected to the people behind it.
