Why does steak taste better at home?

Maybe it’s just us, but some of the best meals we’ve ever had weren’t at fancy restaurants — they were at home standing around the kitchen in sweatpants with a cast iron skillet smoking up the house 😂

One thing we’ve realized over the years is that good food honestly doesn’t have to be complicated.

A really good cut of beef, simple ingredients, salt, pepper, butter, and people you love around the table usually beats an overcomplicated meal every time.

And honestly, once people start cooking with local beef, one of the first things they usually notice is how different it cooks compared to a lot of grocery store beef.

For example, local ground beef usually has way less grease cooking out of it. You’re not left draining a pound of grease out of the pan afterward, and a lot of times the meat cooks quicker too because there’s less excess water and filler cooking off.

A lot of people also overcook local beef at first because they’re used to grocery store beef.

One of our biggest cooking tips is honestly: don’t overthink it and don’t overcook it 😂

Especially with steaks:

  • Let them come closer to room temp before cooking

  • Pat them dry

  • Use salt generously

  • Get your pan HOT first

  • Leave them alone while they sear

  • And let them rest before cutting into them

You don’t need 47 seasonings and a complicated recipe for a good steak.

And burgers? Smash burgers on a cast iron with salt, pepper, and butter are honestly hard to beat.

I think somewhere along the way people started feeling like cooking had to be perfect or fancy, but to me some of our favorite meals are the simple ones. Steak tacos on a weeknight, burgers on the grill, roast in the crockpot while chasing a baby around the house, breakfast for dinner because life is chaotic.

That’s part of the reason we’re so passionate about local food and cooking at home.

When you know where your food came from and you’re starting with quality ingredients, you honestly don’t have to do much to make it good. And as a mom, feeding my family has become something I care about in a completely different way now. I pay attention to ingredients more, where things come from more, and what we’re actually putting on the table every day.

That’s a huge part of the vision behind High Roller Provisions. We want this to be the kind of place where people can stop in and grab local beef, homemade meals, fresh ingredients, coffee, and products from local producers without feeling intimidated or like everything has to be “Pinterest perfect.”
